SALLY’S SPRING DISH
Kumara, Zucchini & Corn Casserole
Ingredients:
4 Kumara thinly sliced, Zucchini thinly sliced, cups diced onion, 2 garlic cloves minced, 2 cups corn kernels, 2 cups grated cheddar, 1 cup sour cream, 2 eggs lightly beaten & cups breadcrumbs
Method:
Preheat oven to 350ºF. Melt 2 Tbsp of butter in a large skillet over medium heat. Add zucchini, kumara, onion and garlic. Sauté for 10 minutes then remove from heat. Stir cooked veggies with the corn, sour cream and eggs. Stir in 1 cup of breadcrumbs and 1 cup of cheddar then season with a pinch of salt and pepper. Spread mixture into a Casserole Dish. Melt another 2 Tbsp butter, add remaining cup of breadcrumbs and cheese. Sprinkle over casserole. Bake uncovered for 45 minutes or to golden brown.
